Ingredients
- 1 Can Black or Red Beans
- 1 Can Chickpeas
- 1 Can Corn Olives
- Cherry Tomatoes (10)
- 1 Cup Lettuce or any other kind of mixed greens
- ¼ Cup Cilantro
- 1 Lemon
- ¼ tsp Chili Powder
- Salt to taste
- 2 Tbsp. Olive Oil
- 1 tsp Cumin
- 2 Avocados (Optional)
- Feta Cheese (if non-Vegan)
Method
- In a large bowl combine beans, chickpeas, corn, tomatoes, olives (Avocado, is Optional)
- Prepare the Dressing in a small bowl; whisk lemon juice, olive oil, cumin, chili powder, salt and cilantro
- Add to the Salad. You can garnish with Feta cheese on top for a non-vegan option
