How to make Vegan Pumpkin Soup?

Ingredients

  • 1 kg Pumpkin (Fresh)
  • 3 Cloves Garlic
  • ½ Cup chopped Onions
  • 2 Tbsp. Canola Oil
  • 1 tsp. Thyme
  • 20 g Vegetable stock (or 2 cubes)
  • 8 cups water
  • Salt and Pepper (to taste)

*Replace 2 cups water with 1 cup coconut cream for richer finish (Optional)

Method

  • Peel the Pumpkin and cut into big cubes then leave aside.
  • Heat the oil, and add Garlic, Onions, Vegetable stock then add the pumpkin cubes and water (with coconut cream as optional), let simmer until pumpkin is tender.
  • Remove from heat and use blender to blend the pumpkin until smooth
  • Season to taste with Salt and Pepper then serve
