How to make Vegan Pumpkin Soup?

Ingredients
- 1 kg Pumpkin (Fresh)
- 3 Cloves Garlic
- ½ Cup chopped Onions
- 2 Tbsp. Canola Oil
- 1 tsp. Thyme
- 20 g Vegetable stock (or 2 cubes)
- 8 cups water
- Salt and Pepper (to taste)
*Replace 2 cups water with 1 cup coconut cream for richer finish (Optional)
Method
- Peel the Pumpkin and cut into big cubes then leave aside.
- Heat the oil, and add Garlic, Onions, Vegetable stock then add the pumpkin cubes and water (with coconut cream as optional), let simmer until pumpkin is tender.
- Remove from heat and use blender to blend the pumpkin until smooth
- Season to taste with Salt and Pepper then serve
