Potato Cheese and Cream Soup

Ingredients

  • 750 gm Potatoes
  • 1 Onion
  • 1 Celery stick cut in cubes
  • 2 Tablespoon Butter
  • 3 Cups Chicken or vegetable stock
  • 100 gm grated Gouda cheese
  • 4 Tbsp. cream
  • Salt, pepper, and Thyme.

Method

  • Peel Potatoes and wash them and cut into cubes
  • In a skillet over medium heat, add butter and onion, then fry the onion till golden and soft.
  • Add stock, potatoes and the celery cubes and cook for 20 minutes over medium-low heat
  • Add Gouda and Cream and stir till cheese is melted.
  • Take away from heat and puree with a hand mixer.
  • Add salt, pepper and thyme according to taste.
  • Serve with bread and garnish with scallions.
