Ingredients
- 750 gm Potatoes
- 1 Onion
- 1 Celery stick cut in cubes
- 2 Tablespoon Butter
- 3 Cups Chicken or vegetable stock
- 100 gm grated Gouda cheese
- 4 Tbsp. cream
- Salt, pepper, and Thyme.
Method
- Peel Potatoes and wash them and cut into cubes
- In a skillet over medium heat, add butter and onion, then fry the onion till golden and soft.
- Add stock, potatoes and the celery cubes and cook for 20 minutes over medium-low heat
- Add Gouda and Cream and stir till cheese is melted.
- Take away from heat and puree with a hand mixer.
- Add salt, pepper and thyme according to taste.
- Serve with bread and garnish with scallions.
