Egyptian Lentil Soup

Ingredients

  • 1 cup orange Lentils
  • 1 medium sized Carrot
  • 1 medium sized Potato
  • 1 medium sized onion
  • 1 medium sized Zucchini
  • 1 medium sized Tomato
  • 1 stick celery
  • 3-4 Garlic cloves
  • 2 Tbsp. fresh lemon juice
  • Salt and cumin
  • some freshly chopped parsley for decoration (optional)
  • some fresh cream to top your soup(optional)

Method

  • Wash lentils, drain them then put them in a pot.
  • Peel, carrots, onion, potato, garlic and zucchini, chop them then add to the pot.
  • Cut the tomato and celery stick, then add to the pot.
  • Cover with water and start heating, when they start boiling, reduce heat and leave to simmer for 15-20 minutes.
  • Add water whenever it is reduced (Soup thickness is according to your taste)
  • Add Salt, Cumin and Lemon juice.
  • With a hand mixer, mix the soup ingredients in the pot till well blended and smooth (do not forget to remove the celery stick)
  • You can filter your soup through a sieve if you want.
  • Serve in plates with a dollop of cream and some parsley on top.
