Freekeh Soup with Shredded Chicken

Ingredients
- ½ cup stone-ground freekeh rinsed in water
- 250 gm boneless chicken breast
- 2 liters chicken stock
- 2 Tbsp. olive oil
- 1 onion chopped finely
- 1 tsp. allspice
- 1tsp. cumin
- ½ tsp. black pepper
- Salt
For the chicken broth:
- 1 kg chicken with bones and skin
- Salt and pepper
- Bay leaves
- 1 stick cinnamon
- 4 cardamoms
- 1 onion Water
Method
- Boil the chicken for 20 minutes with all the above spices, remove from water (use the broth for the soup).
- Rinse the freekeh with cold water thoroughly in a colander till all pieces of dirt are removed
- In a medium pot, heat the olive oil and fry the onion until soft. Add the freekeh and the spices, and stir to coat each grain.
- Pour the strained chicken broth, turn the heat up to high, and bring to boil
- Add the shredded chicken, then cover the saucepan, turn the heat down to low, and cook until tender, about 45 minutes.
- To serve, add some chopped parsley, and a squeeze of a lemon.
