Arabic Lentil Creamy Soup

Ingredients

  • 2 medium onions, finely chopped
  • 2 cups peeled grated carrots
  • 1 big potato diced
  • 2 cups orange lentils
  • 2 liters water (add more if it’s thick)
  • 2 tsp cumin
  • ¼ tsp turmeric
  • 3 tsp sea salt
  • ¼ cup olive oil
  • Fried or toasted Arabic bread croutons

Method

  • In a large pot, sautée the onions in the olive oil until soft, add all the other ingredients except the spices and bring to boil.
  • Cook it on medium flame for 30 minutes until the soup thickens. Stir periodically so that lentils don’t stick and burn.
  • Add the spices and salt and puree the soup in the blender until creamy.
  • Garnish it with chopped parsley
  • Serve with croutons at the side and lemon wedges.
