Ingredients
- 1 Cup Diced Onion
- 1 ½ Tbsp. Canola Oil or Coconut Oil
- 1 Cup red or brown Lentils
- 1 medium sweet potato cut into cubes
- 1 large carrot, chopped
- 1 Tbsp. mild curry powder
- 1 tsp. ginger powder
- Salt and Pepper to taste
- 2 Cubes Vegetable Broth
- ½ cup coconut milk
- ½ Can Chickpeas
Method
- Heat the Oil and Sautee the Onion until It turns golden. Add the lentils, potato, carrot, Chickpeas and the seasoning.
- Add the vegetable broth and boil then reduce the heat and cook for approximately 20 minutes, until the lentils and sweet potatoes are tender.
- Add the coconut milk
- Season with Salt and Pepper
- Serve with White Rice
