How to make Tarte aux Pommes (Apple Tart)?

Ingredients

250g flour 125g cold butter, cut into small cubes

1 egg yolk
-
a pinch of salt
-
¼ cup of cold water, less or more
For the filling,

5 apples cut into round discs

1 teaspoon of cinnamon
-
2 tablespoons of cornstarch
-
3 tablespoons of brown sugar
-
Juice of half a lemon

A pinch of salt
Method

In a large bowl, mix the flour and salt then using your fingers, gradually work the butter into the flour for about 3 or 4 minutes until it resembles a coarse meal. In a small bowl, beat an egg yolk with a fork and then pour it into the flour mixture. Add the cold water, 1 tablespoon at a time and stir together gently until all of the ingredients are incorporated.

Put the dough into a plastic bag. Using a rolling pin, slightly flatten the dough ball into a thick round disc to make rolling easier later. Seal the bag and place them in the freezer until you need it. If you will be using it immediately it’s still a good idea to put in the freezer for about 15 to 20 minutes to chill.

When you are ready to use the dough to make a crust, remove from the freezer and allow to thaw for 15 minutes. On a floured surface roll the dough, starting at the centre and working your way out. (Sprinkle some flour over top of the dough if it’s a bit too moist.) If the dough is sticking to the countertop use a metal spatula and carefully scrape it up and flip it over.

Mix your filing ingredients in a bowl and let sit for an hour

Arrange your sliced apples without the liquid, and fold over the dough edges.

Bake in a 200 C oven for 45 minutes until golden and browned.
