Ingredients
- 3 eggs.
- 1 tsp (5g) vanilla extract.
- 1 cup (200g) sugar.
- 3/4 cup of vegetable oil.
- lemon zest from 2 lemons.
- 2 tbsp (30ml) lemon juice.
- 2 1/4 cups (280g) all-purpose flour.
- 2 tsp (8g) baking powder.
- 2/3 cup (160g) buttermilk.
- 6 oz (170g) fresh blueberries.
- 1 tsp (5ml) oil for coating the blueberries.1
- tbsp (10g) flour, for tossing the blueberries
Lemon Glaze:
- 1 cup (125g) powdered sugar.
- 2 tbsp (30ml) lemon juice.
Method
- Prepare the blueberry cake. Preheat the oven to 350F (180C). Grease and line with parchment paper a suitable cake mould.
- In a bowl, whisk the flour with baking powder ; set aside until ready to use.
- Beat the eggs with vanilla and lemon zest for two minutes, then add the sugar and beat until completely dissolved, then add the oil.
- Add the lemon juice and mix until well combined. Reduce speed to low alternate adding flour mixture and buttermilk until everything is incorporated.
- Place blueberries in a medium bowl, toss with 1 tsp of oil and 1 tbsp of flour.
- Gently fold the blueberries into the batter, not too much as you don't want your batter to become blue. Only a few folds will be enough.
- Pour the batter evenly into the prepared mould.
- Bake for about 40_45 minutes until a toothpick inserted into the center comes out clean.
- Let the cool on a cooling rack for 10 minutes.
- Remove the cake from the mould and let it cool completely.
- prepare the lemon icing by mixing the powdered sugar with lemon juice. Enjoy!
