Ingredients
- 1 cup bowtie pasta
- 2 cups chopped baby spinach
- 2 cups chopped arugula
- ½ cup cranberries
- ½ cup walnuts
- ½ cup bleu cheese
- ¼ cup raisins
Dressing Ingredients
- 1/3 cup balsamic vinegar
- 2 TBSP honey OR 1 TBSP Sugar
- 1 TBSP Mustard
- 1/3 Cup Olive Oil
- Salt/Pepper to taste
Method
- Cook pasta el dente and set aside to cool down
- Mix together all salad ingredients
- Mix together all dressing ingredients
- Sprinkle dressing over salad and enjoy
- Note: you can prepare the salad ahead of time and let sit aside in the fridge. Just add the dressing before serving.
