Ingredients
- 6 large handfuls of various lettuce and greens mix
- 1 small bunch of radish thinly sliced A handful of walnuts, dry toasted A loaf of good sourdough or country bread, cut and toasted
- 1 teaspoon of dried mint
- 150g soft goat cheese
For the dressing
- 2 small red onions finely chopped
- 5 tablespoons of olive oil
- 3 tablespoons of red vinegar
- Few sprigs of fresh parsley finely chopped
- Salt and pepper
Method
- Mix the dressing in a small bowl.
- Put your salad ingredients in a big serving bowl, sprinkle on your walnuts and then the dried mint
- Drizzle over the dressing and coat well
- Serve with the toasted bread spread with the goat cheese.
