Ingredients
- 3 bunches of parsley (cleaned and finely chopped)
- 1 bunch of Spinach (cleaned and finely chopped)
- 1.5 cup cooked quinoa
- 2 medium tomatoes (finely chopped)
- 2 green onions (finely chopped)
- 1 small bunch of fresh mint (thinly chopped) Dressing
- 1 teaspoon kosher salt plus more
- 1 lemon freshly squeezed
- 2 garlic cloves, minced
- 1 cup extra-virgin olive oil
- Freshly ground black pepper
- Salt to taste
Method
- Mix all tabbouleh ingredients together
- Mix all dressing ingredients and then add to tabbouleh mixture
