How to prepare a delicious Tomato Okra stew

Ingredients
1/2 kilo frozen or fresh okra (stems removed) deep fried and drained 2 large tomatoes peeled and diced or one can of diced tomatoes 1 onion cut into med size cubes 1 head of garlic, peeled 1/2 cup of fresh cilantro chopped Juice of one lemon salt 1 cup water 1/2 cup extra virgin olive oil
Method
- In a skillet heat half the amount of extra virgin olive oil and cook onions till translucent and cooked through
- Add whole garlic cloves and cook for a few minutes
- Season with salt and add cilantro
- Cook for a few minutes and remove off heat
- Arrange fried okra in an oven dish, top with onion mixture then tomatoes
- Add salt, olive oil, lemon juice and water
- Cover and cook over med to low heat covered on top of the stove or in the oven till cooked through and almost most of the water has evaporated
- Remove off heat and serve hot with pita bread and pickles
