Freekeh Chowder Recipe

Ingredients

1/4 fine freekeh 2 Tbsp olive oil 1 small onion, chopped 1 med potato, chopped 1 large carrot, chopped 1 small can of corn (about a cup) 1 stalk celery chopped 1 small red bell pepper chopped 1 liter chicken stock salt and pepper 1 1/4 cup milk

Method

  1. Take 3 Tbsp of corn and blend with 1/4 cup of milk
  2. Put oil in a big pot, saute onions till translucent
  3. Add the rest of veggies and stir for few minutes
  4. Add flour and stir for a minute. Add freekeh and stock.
  5. Let it come to a boil and then simmer over low heat for 30 minutes till all is cooked.
  6. Add the rest of the milk and the milk with corn and let it cook for another 10 minutes.
  7. Serve hot.
