Ingredients
1/4 fine freekeh 2 Tbsp olive oil 1 small onion, chopped 1 med potato, chopped 1 large carrot, chopped 1 small can of corn (about a cup) 1 stalk celery chopped 1 small red bell pepper chopped 1 liter chicken stock salt and pepper 1 1/4 cup milk
Method
- Take 3 Tbsp of corn and blend with 1/4 cup of milk
- Put oil in a big pot, saute onions till translucent
- Add the rest of veggies and stir for few minutes
- Add flour and stir for a minute. Add freekeh and stock.
- Let it come to a boil and then simmer over low heat for 30 minutes till all is cooked.
- Add the rest of the milk and the milk with corn and let it cook for another 10 minutes.
- Serve hot.
