Ingredients
Crust Ingredients
- 2 ½ cups Gluten-free all-purpose flour
- 2 Tbsp. Granulated Sugar
- ½ tsp. Salt
- 1 Cup Very Cold Coconut Oil, cut into cubes
- ½ Cup Cold water
For the Brown Crumb
- ½ Cup Brown Sugar
- 2 Tbsp. Granulated Sugar
- ½ Cup GF All-Purpose Flour
- 1/3 Cup GF Oats
- 1/3 Cup pecans or walnuts, chopped
- 8 Tbsp. Coconut or Canola Oil
For the Apple Pie Filling
- 2 Apples, peeled and sliced
- 1/2 Tsp Apple Cider Vinegar
- 1/2 tsp Vanilla
- 1/4 Cup light brown sugar
- 1 tsp Cinnamon
- ¼ tsp nutmeg
- 1 Tbsp. Cornstarch
Method
For the Crust
- Combine flour, sugar and salt in a blender, Add the coconut oil (cold and thick) and pulse, slowly add cold water to form moist clumps. Divide the dough into 2 balls, wrap each in plastic and place in the fridge for at least an hour.
For the Oat Crumb
- Combine Sugar, flour, oat and walnuts or pecans. Mix well and place the crumb topping in the fridge
For the Apple Filling
- Toss apple slices with apple cider vinegar and vanilla. In a separate bowl add the sugar, cinnamon, nutmeg, and cornstarch then mix well. Add the dry mixture to the apple mixture.
- Preheat oven and lightly grease a pie pan with non-stick spray or olive oil and little flour
- Take out the dough and roll in on a lightly floured surface then place it into the prepared pie pan and trim the edges
- Soak the bottom of the pie with a bit of flour then add the apple filling and the cold crumble on top of the apple filling then place in the oven for approximately 50 min
- Let it cool for at least 2 hours before serving
