Sweet Couscous

Ingredients

  • A handful of dried apricots, roughly chopped
  • 1 orange, zested and juiced
  • 200g of couscous
  • 500ml of full-fat milk
  • 3 Tbsp. of runny honey
  • A handful of pistachios
  • A pinch of cinnamon

Method

  • Put the chopped apricots into a bowl and the zest of the orange, and pour in just enough boiling water to cover them.
  • Put the couscous into a pan over medium heat and add the milk and 2 tablespoons of the honey, bring to a simmer and let it cook away for about 5 to 7 minutes, stirring every now and then. Make sure it does not dry out too much, you want it to have a fairly wet texture.
  • Meanwhile, toast the pistachios in a hot dry pan then add the remaining honey.
  • Tip the apricots and the juice and puree in a blender with the orange juice.
  • Divide the couscous between your serving bowls then add pureed apricots and spoon over some sticky pistachios and a sprinkle of cinnamon.
