Spiced Carrot and Orange Salad

Ingredients
- 5 carrots, peeled and grated
- 1 large orange, segmented
- Zest and juice of 1 orange
- 1 Tbsp. runny honey
- 1 Tbsp. white vinegar
- 3 Tbsp. olive oil
- 1 tsp. cumin seeds
- ½ tsp. ground cinnamon
- 1 tsp. dried mint
- Fresh coriander leaves Salt and pepper
Method
- Mix the carrots and orange segments in a bowl with the orange zest and juice.
- Grind the cumin seeds with a little sea salt using a pestle and mortar, then stir them into the carrot mixture.
- Combine the honey, vinegar and olive oil in a bowl. Add the mint and coriander leaves, then taste and adjust the seasoning as necessary. Pour over the salad and toss well. This can be eaten straight away. And can be kept for up to 2 days in the fridge.
