Ingredients
- Bell Pepper (depends on need)
- ½ cup red or black beans
- 3 Tbsp. Cilantro
- 1 cup Corn
- 1 tsp. Garlic Powder
- ¼ cup onions
- ½ cup tomatoes
- 3 cups Quinoa (Cooked)
- Chili powder (to taste)
- Salt & Pepper (to taste)
- 1 tsp. Cumin
Method
- Preheat Oven and line baking dish with Parchment paper or olive oil
- In a large bowl mix Quinoa, corn, beans, tomatoes (diced), cilantro, cumin, garlic, onions (chopped), chili powder, salt and pepper
- Spoon the filling into each bell pepper (it would look nice, if you used different colors)
- Place the stuffed pepper in the baking dish and bake until the peppers are tender (around 20 minutes)
