Ingredients
- 1 cup orange Lentils
- 1 medium sized Carrot
- 1 medium sized Potato
- 1 medium sized onion
- 1 medium sized Zucchini
- 1 medium sized Tomato
- 1 stick celery
- 3-4 Garlic cloves
- 2 Tbsp. fresh lemon juice
- Salt and cumin
- some freshly chopped parsley for decoration (optional)
- some fresh cream to top your soup(optional)
Method
- Wash lentils, drain them then put them in a pot.
- Peel, carrots, onion, potato, garlic and zucchini, chop them then add to the pot.
- Cut the tomato and celery stick, then add to the pot.
- Cover with water and start heating, when they start boiling, reduce heat and leave to simmer for 15-20 minutes.
- Add water whenever it is reduced (Soup thickness is according to your taste)
- Add Salt, Cumin and Lemon juice.
- With a hand mixer, mix the soup ingredients in the pot till well blended and smooth (do not forget to remove the celery stick)
- You can filter your soup through a sieve if you want.
- Serve in plates with a dollop of cream and some parsley on top.
