Ingredients
Kofta meat
- mix 500 gm low-fat ground beef
- ½ cup finely chopped onion
- ½ cup finely chopped parsley
- 1 tsp salt
- ½ tsp allspice
Note: ask the butcher to prepare it for you in any Arabic butchery
Other ingredients to set up the baked kofta:
- 3 big potatoes, (800 gm potato)
- 2 Tbsp. olive oil
Tahini Sauce:
- 1 cube chicken stock
- 1 cup Tahini
- ½ cup lemon juice
- 2 tsp. salt
- 1 tsp. allspice
- 1 cup water
- 1 cup yogurt
- Garnish, fried pine nuts and chopped parsley
Method
- Mix all the ingredients of kofta in a large bowl, (I buy this mix ready from the butcher shop).
- Meanwhile, peel the potatoes; cut in rounds of ½ cm thick, fry them half way cooked.
- In a baking dish, form the meat in oval shaped balls, place the meat balls in baking dish covered with foil paper, bake in oven for ten minutes until partially cooked and its water drained.
- Remove from oven; wash out the water of the meat.
- In a nice baking dish, arrange the fried potatoes in between the kofta balls.
- Mix the tahini sauce, by adding the tahini to the lemon juice, then smooth the mix with yoghurt and water slowly, dissolve the maggi cube in 1tbs hot water, then add it to the tahini sauce, season with salt, pepper and all spice.
- Pour the tahini sauce all over the kofta.
- drizzle the 2 Tbsp. olive oil
- Cover with foil paper, poke a few holes in the foil to allow steam to escape
- and bake meat in oven on the lowest rack for 20 minutes in 250 C degree oven until the sauce thickens
- Remove the foil and brown it under grill.
- Garnish with fried pine nuts and chopped parsley
- Serve it hot with rice, and bread.
