Ingredients
- 2 Tbsp. Canola Oil
- 2 Medium Cloves garlic, minced
- 2 Medium carrots, peeled and diced
- 1 medium onion, chopped
- 2 Vegetable stock
- 1 Cup water
- 6 Regular tomatoes, chopped
- ¼ Cup Fresh Basil, finely chopped
- ½ Cup Fresh Parsley, finely chopped
- Squeeze of Lemon Juice
Method
- In a large Pot, heat the oil, garlic, carrots and onions and cook over medium-low heat until the onion is tender
- Add the Vegetable Stock and water, cover and simmer for 15 min
- Add the tomatoes and simmer for 10 more minutes
- Remove from heat and blend the soup with a hand blender until smooth
- Add the parsley and basil
- Add Salt and Pepper to taste
- Also, add some lemon juice (squeeze) to taste (this is optional)
