Tomato Basil Soup -Vegan-

Ingredients

  • 2 Tbsp. Canola Oil
  • 2 Medium Cloves garlic, minced
  • 2 Medium carrots, peeled and diced
  • 1 medium onion, chopped
  • 2 Vegetable stock
  • 1 Cup water
  • 6 Regular tomatoes, chopped
  • ¼ Cup Fresh Basil, finely chopped
  • ½ Cup Fresh Parsley, finely chopped
  • Squeeze of Lemon Juice

Method

  • In a large Pot, heat the oil, garlic, carrots and onions and cook over medium-low heat until the onion is tender
  • Add the Vegetable Stock and water, cover and simmer for 15 min
  • Add the tomatoes and simmer for 10 more minutes
  • Remove from heat and blend the soup with a hand blender until smooth
  • Add the parsley and basil
  • Add Salt and Pepper to taste
  • Also, add some lemon juice (squeeze) to taste (this is optional)
