Arabic Lentil Creamy Soup

Ingredients
- 2 medium onions, finely chopped
- 2 cups peeled grated carrots
- 1 big potato diced
- 2 cups orange lentils
- 2 liters water (add more if it’s thick)
- 2 tsp cumin
- ¼ tsp turmeric
- 3 tsp sea salt
- ¼ cup olive oil
- Fried or toasted Arabic bread croutons
Method
- In a large pot, sautée the onions in the olive oil until soft, add all the other ingredients except the spices and bring to boil.
- Cook it on medium flame for 30 minutes until the soup thickens. Stir periodically so that lentils don’t stick and burn.
- Add the spices and salt and puree the soup in the blender until creamy.
- Garnish it with chopped parsley
- Serve with croutons at the side and lemon wedges.
