Ingredients
- 4 Large Chicken Thighs
- 1 medium sized chopped Onion
- 2 chopped Garlic Cloves
- 2 Tablespoons Olive Oil
- Juice of 2 Lemons Freshly
- chopped Herbs (The amount you want): Parsley, Coriander, Thyme, Rosemary and Lemon balm.
- Salt, Pepper and Chicken spices
- Baby Potatoes,
- Onions,
- Garlic,
- Chopped Lemon (optional)
Method
- Wash Chicken and marinade in Onion, Garlic, Olive Oil, Herbs , Lemon juice , Salt, Pepper and Chicken spices.
- Leave for minimum 2 hours.
- Preheat your Oven to 220°C.
- Put chicken, skin side down in an Oven Casserole and add the Potatoes, Onions and Garlic.
- Add 1/2 cup of Water to the bottom.
- Put in the Oven for 20-25 minutes, then turn the Chicken to the other side (Skin side up) and leave it to cook for more 25 minutes, till the Skin side is roasted.
