Peas with Chicken and Cilantro

Ingredients
- 1 whole chicken
- 2 Bay leaves
- 1 Cinnamon Stick
- 5 Cardamom Pods
- Salt and pepper
- 5 medium-sized tomatoes cut into quarter
- 3 garlic cloves crushed + 3 garlic cloves crushed
- Olive oil
- 2 bags of frozen peas
- 2 medium-sized carrots cut into circles
- 1 bunch of cilantro
- 70 grams tomato paste
Method
- Cut the chicken into pieces
- Clean properly with Lemon and Vinegar
- Boil chicken with bay leaves, cinnamon, cardamom, salt and pepper
- In a separate pan; heat olive oil and fry 3 garlic cloves and then add cut the tomatoes. Let them boil until sauce thickens.
- Once chicken is tender remove from broth. Debone and remove the skin.
- Add tomatoes, tomato paste and the diced carrots to the broth. Let it boil until sauce thickens
- Add frozen peas. Let it boil for another 5 minutes
- Add chicken pieces back to broth
