How to make Tamarind Juice (Tamer Hindi)?

Ingredients

  • 1 package (200gm) tamarind paste

  • 4 cups (1 litres)

  • 1 ½ cup sugar (to taste)

Method

  • Soak the tamarind paste in the 6 cups water overnight.

  • The other day, rub the paste with hands, add sugar and bring to boil for 5 minutes, skimming off any foam from the top.

  • Cool 30 minutes then strain the liquid through a fine mesh sieve lined with cheese cloth, squeezing the cheese cloth to extract the liquid.
