How to make Creamy Zucchini Soup?

Ingredients

1 Tbsp. coconut oil
-
1 small onion, diced

2 cloves of garlic, minced

1 kg (around 10 pieces) zucchini, skin on, cut in big chunks

4 cups vegetable stock

1/2 Tbsp. dried basil

Salt & pepper, to taste

1/2 cup coconut milk / any kind of milk / crème fraîche (optional)

Fresh herbs (optional)
Method

Heat oil in a pot over medium heat and sauté onions and garlic. Cook for a couple of minutes until softened.

Add zucchini and sauté for a few more minutes.

Add vegetable stock, dried basil, salt and black pepper.

Bring to boil and simmer for 20 minutes or until zucchini are completely tender.

Remove from heat and purée with an immerse blender. Return to pot, add the milk or cream if you prefer and cook for 7 mins.

Serve warm garnish with some crackers or fresh herbs if you prefer.
