Ingredients
- ½ Cup Quinoa cooked
- ¼ Cup Olive Oil
- ¼ Cup Fresh Squeezed Lemon Juice
- 1 tsp salt
- 1 Cup spinach
- ¼ Cup finely chopped red onion
- ½ Cup chopped walnut
- ½ Cup cherry tomato
- ½ Can red beans
- ½ Can corn
Method
- To prepare the sauce, mix the olive oil, lemon juice, and salt until well combined.
- Add the spinach, corn, red onions, red beans, and cherry tomatoes, then toss to combine.
- Sprinkle walnuts on top and then combine it with the dressing. It’s always better to have it cold, so if you have time place it in the refrigerator for 20 minutes.
