Ingredients

  • 1 medium ripe tomato.
  • A handful of ripe cherry tomatoes.
  • 1 medium red onion, peeled and thinly slice
  • A handful of chopped lettuce leaves
  • 1 cucumber.
  • chopped 1 green pepper.
  • sliced 1 handful fresh dill.
  • 1 handful fresh mint leaves.
  • A handful of Kalamata olives
  • 4 tablespoons olive oil
  • 4 tablespoons red vinegar
  • Salt and pepper
  • Feta cheese

Method

  • Mix everything together, toss in the dressing then crumble over the feta cheese.
