Delicious Semolina Cake filled with Cream

Ingredients
For the Cake: (using the measuring cups)
- 2 Cups Coarse Semolina (durum wheat) or you can use the other fine Semolina
- 1/2 Vegetable oil
- 200 gm Mascarpone
- 340 gm Evaporated milk
- 2 Tablespoons sugar
- 2 Teaspoons Baking powder
For the filling:
- 250 ml whipping cream
- 250 ml whole milk
- 3 Tablespoons Starch (corn flour)
- 3 Tablespoons sugar A packet of vanilla
- (200 gm cream cheese) Optional
- Sugar Syrup
Method
- Preheat the Oven to 200 °C.
- In a bowl, mix the cake ingredients using a whisk, till they are all combined.
- Pour half of the dough in a buttered cake form (or square form) and put it in the oven for nearly 15 minutes.
- Prepare the filling (While the Cake is in the Oven)
- Put all of the filling ingredients in a saucepan and keep stirring over medium heat till the filling boils and thickens.
- Remove from heat (after removing from heat, you can add the cream cheese and mix well) and then set aside, till the cake comes out of the Oven.
- Pour the filling mixture over the dough and put the rest of the dough over it. The dough becomes a little bit harder, so you can add a little bit of milk to be easily spreadable.
- Enter it in the oven once again for nearly 15-20 minutes till its color becomes golden brown from the top.
- Take it out of the oven and pour the "cold" sugar syrup over the very hot cake, and leave it for 5 minutes to absorb all of the syrup.
- Leave it to cool for an hour then serve.
