Pomegranate Cranberry Baked Brie

Ingredients
8oz (about 2 cups) fresh or frozen cranberries 3/4 cup pomegranate juice 1/2 cup granulated sugar, feel free to add less, to taste 1 tsp zest of an orange 3/4 cup pomegranate arils 1 wheel of brie cheese 1 Tbsp. honey Nuts, crackers & bread for serving
Method
- In a large bowl, dissolve yeast in warm water* and sprinkle sugar on top. Let the yeast “activate” for 10
- Preheat oven to 350F degrees.
- Combine cranberries, pomegranate juice, sugar & orange zest in a sauce pan on a medium-high heat and stir to combine. Bring to a boil then reduce heat to medium-low and simmer for 8-10 mins.
- Meanwhile, line a baking sheet with a parchment paper and place brie wheel in the center. Pop it in the oven for 10 mins or until the cheese has melted from the inside. Top it with honey and pomeg-berry sauce then return it bake to the oven for 3-4 more mins.
- Transfer it into a serving dish and serve it immediately with nuts, crackers or slices of bread.
NOTE
- The sauce makes more than you need so you can keep the rest of it in your freezer for months.
