Ingredients
- 8 cream cheese squares
- 450 g frozen peas
- 1 small onion (chopped)
- 1 garlic clove (crushed)
- 2 teaspoons oil
- 550 ml hot vegetable or chicken stock
- Black pepper (freshly ground) to taste
- 1 teaspoon salt
Method
- Heat the oil in a saucepan and fry the onion and garlic until the onions are softened
- Add the peas with the stock and simmer for 15 minutes until the peas become soft
- Add the cream cheese squares with the salt and pepper
- Remove them from heat and mash them using a hand blender until they become smooth
- Garnish with mint leaves
