Herb potato omelette

Ingredients
8 eggs 3 table spoon milk salt, black pepper 1/4 tsp turmeric 1/3 cup of each of these herbs (finely chopped): Dill, cilantro and parsley 1 med potato grated 1 med onion finely chopped 3 Tbsp olive oil
Method
- In a large non-stick skillet, heat olive oil and add onion, cook till translucent.
- Add potato, salt and pepper and stir on medium to low heat till potatoes are cooked a a light gold brown.
- In a bowl, beat eggs, milk and spices.
- Add the herbs.
- Add the eggs mixture to the pan and raise the heat to cook the bottom.
To cook the top you can either: 1. flip the omellete in another greased non-stick skillet and cook till cooked through. 2. Broil the top. 3. Try to flip it by hand (at a risk of breaking the omelette)
