How to make Taco Pasta Casserole

Ingredients
4 cups penne or ziti pasta (you can choose any kind you like) 250 gram ground beef (that comes to about a 1/2 a pound) 1 onion finely chopped 3 cloves of garlic 1 cup whipping cream (you can use evaporated milk or Greek yogurt if you like or as the recipe called for sour cream) 1 can chopped tomatoes 2 table spoons tomato paste 1 cup water salt, pepper 1 amount of taco spice blend (above) 1 1/2 cup white cheddar cheese, grated 1/4 cup Parmesan cheese; grated Green onions (sliced the green part only) for garnish; optional
Method
- Cook pasta as directed, drain and place in an oven dish.
- In the meantime, cook beef till no longer pink. Add onion and cook for another 3 minutes. Add garlic and cook for one minute. Add tomatoes and cook for another 5 minutes. Then add the spice blend, water, tomato paste and season accordingly. If too thick you can add more water. Cook it for about 15 minutes. Add cream and let it heat through. Do not boil.
- Pour it over pasta, add half the amount of cheddar cheese and all the Parmesan and mix. Add the rest of the cheese.
- Bake in the oven at 180 c or 350 F for around 20-25 minutes till nice and bubbly. Enjoy with garlic bread (recipe below and a salad)
