Roasted Apples and Carrots
Peel apple and cut into chunks. Place on a baking sheet lined with parchment paperLightly drizzle apple with olive oil , salt, pepper, and cinnamon. Roast in a 180 degree oven for 30 minutes or until cooked through. Boil carrots until soft and drain. Blend roasted apples and boiled carrots with a handheld immersion blender or a regular blender adding water until you reach desired consistency. Let cool and store in the fridge for up to two days or in the freezer in. Well sealed air vacuumed bag for up to a month.
