How to make Japanese Potato Salad ?

Ingredients

  • 4 potatoes
  • 1 carrot peeled & cut into thin round slices 
  • 1 cucumber cut into thin round slices 
  • ¼ cup Japanese mayonnaise (I used Kewpie)
  • 1 green onion cut into thin slices
  • 1 TBSP Lemon
  • Salt/Pepper to taste
  • ¼ cup crab

Method

  • Peel potatoes and bring to boil until tender
  • Meanwhile, combine onions and cucumbers and season with salt, set aside
  • Prepare the dressing by mixing the mayonnaise and lemon juice and whisk until combined thoroughly
  • When potatoes are cooked, drain water and mash up with a fork. Allow the mixture to cool down to room temp.
  • Place the cucumbers and onions mixture in a towel and drain all liquid to ensure they remain crunchy
  • Add the cucumbers, onions, and carrots, to the potato mixture once cooled, then mix in the mayonnaise dressing
  • Top off with the crab mixture and mix again
  • Season with salt/pepper to your liking
