Ingredients
2-3 medium celery 1 medium parsley root – if available 1/2 fresh parsley bunch. Garlic as desired 2 medium onions 2 small leeks (if not available, replace with 2 medium onions) 1 kg tomatoes 1 kg of potatoes
Method
Recipe steps:
- Do not peel any of these vegetables, just wash them with apple cider vinegar with a small brush.
- Cut them coarsely and put them in a stainless steal bowl and with water. allow them to boil and then simmer them slowly for 3 hours.
- Blend the vegetable soup with your food processor in small portions until you reach a creamy soup
- Keep well covered in refrigerator, and heat on serving at a time.
