Ingredients

1 tablespoon butter (I used beef bacon fat) 1/2 cup diced white onions 1/2 cup diced carrots 1/2 cup chopped celery 3 medium potatoes, peeled and diced 2 cups chicken broth 3 tablespoons flour 2 cups milk 2 teaspoons salt 1 teaspoon black pepper Pinch of red pepper flakes 1 cup frozen corn 1/2 cup shredded cheese (more for topping) 1/4 cup chopped cilantro

  • In an 8 quart saucepan on medium heat, add fat, onions, carrots, celery and red pepper flakes, mix. Allow to cook for 5 minutes. Add chicken broth and potatoes, salt and pepper. Bring to a full boil, reduce to low-medium, cover and cook for 15 minutes.
  • Add milk, corn, cheese and cilantro. In a small bowl, add flour and a bit of water, mix until well combined, then add contents to pan, stir. Bring to a boil, cover, reduce to low and cook for another 15 minutes.
